Sleeping fish
Ingredients for 2-4 people
3 fish app. 300gr each some celery parson 2-3 large onions 2 cloves garlic 2-3 large lemons 4 carrots 3 large potatoes 8-10 cherry tomatoes 1 cup red dry wine 1/2 cup water salt and pepper dried coriander seeds balsamic vinegar olive oil Spread some olive oil on the fish -including inner parts- and season it. Spread some oil on the baking tray. Place one layer of celery, onions and sliced lemons, as to create a bed for the fish to "sleep on". Place the fish and cover it with a layer of celery, onions and lemons. Cut into small pieces the potatoes, carrots, parson and the garlic and place them in a large bowl. Add salt, pepper, coriander, 1/3 of the cup of wine, some vinegar and olive oil and mix them. Poor the mixture around the fish. Cut tomatoes in half and place them in the baking tray. Add the water around the fish. Poor the wine on the fish and spray the olive oil. Cover with tin foil. Bake for 20 min at 200C. Remove the foil and bake for another 30 min at 150 C. |
